Lentil halwa
Ingredients:
Moong dal (yellow lentils) – 100 g
Ghee – 100 g
Sugar – 150 g
Milk – 300 ml
Water – 200 ml
Cardamom powder – 1/2 tsp
Sliced almonds and cashews – 30 g
Raisins – 10 g (optional)
Instructions:
1. Soak and Grind Dal:
Wash the moong dal thoroughly, then soak it in water for about 2-3 hours. Drain the water and grind the dal into a coarse paste.
2. Cook the Dal:
In a thick-bottomed pan, heat ghee on medium heat. Add the ground moong dal paste and stir continuously, frying until it turns golden brown and releases a nice aroma. This can take around 15-20 minutes.
3. Add Milk and Water:
Slowly add the milk and water mixture into the fried dal, stirring constantly to avoid lumps. Cook for about 10 minutes until the dal absorbs the liquid and thickens.
4. Add Sugar:
Add sugar and stir well until the sugar dissolves completely. Keep stirring for another 5-10 minutes until the halwa reaches your desired consistency.
5. Finish with Cardamom and Nuts:
Mix in the cardamom powder, sliced almonds, cashews, and raisins. Cook for a couple more minutes, then turn off the heat.
6. Serve:
Garnish with extra nuts if desired and serve warm.
This halwa is rich and indulgent, so it’s best enjoyed in moderate portions!
