Zunka Bhakar recipe
Zunka Bhakar is a traditional Maharashtrian dish that pairs a spicy gram flour preparation (Zunka) with a rustic millet or wheat flour bread (Bhakar). Here’s a recipe that provides measurements in grams, designed to serve 4 people.
Ingredients for Zunka:
- Gram flour (Besan): 200 grams
- Onion: 100 grams, finely chopped
- Green chilies: 10 grams, chopped
- Garlic: 10 grams, minced
- Mustard seeds: 5 grams
- Cumin seeds: 5 grams
- Curry leaves: 5 grams
- Turmeric powder: 2 grams
- Red chili powder: 5 grams
- Salt: to taste
- Oil: 30 grams
- Water: Approximately 200 ml
- Fresh coriander (Cilantro): 10 grams, chopped for garnish
Ingredients for Bhakar:
- Whole wheat flour or Jowar (Sorghum) flour: 400 grams
- Salt: 2 grams
- Water: As needed to form a dough
- Oil: For greasing
Instructions:
For the Zunka:
- Heat Oil:
- In a pan, heat the oil and add mustard seeds, cumin seeds. Let them crackle.
- Add chopped onions, green chilies, garlic, and curry leaves. Sauté until the onions turn translucent.
- Prepare the Zunka:
- Add turmeric powder, red chili powder, and a pinch of salt. Mix well.
- Slowly add gram flour, stirring continuously to prevent lumps. Roast the gram flour until it smells nutty and cooked, about 3-5 minutes.
- Gradually add water while stirring continuously to maintain a semi-dry consistency. Cook for an additional 5-7 minutes.
- Check seasoning and adjust according to taste. Garnish with chopped coriander.
For the Bhakar:
- Make the Dough:
- In a mixing bowl, combine the flour and salt. Gradually add water and knead into a soft, pliable dough.
- Divide the dough into equal portions and roll each portion into balls.
- Cook the Bhakar:
- Flatten each ball and roll it into a round disk, similar to a roti but slightly thicker.
- Heat a griddle or tawa, and place the rolled dough onto it. Cook on medium heat until spots appear, then flip.
- Apply a little oil on each side and press slightly using a spatula to ensure even cooking and puffing.
- Cook until both sides are golden brown and the bhakar is properly cooked.
Serving:
- Serve hot Zunka with warm Bhakar. This meal is typically enjoyed with a side of raw onion and green chili for added flavor.
This Zunka Bhakar recipe is wholesome, filling, and delivers a burst of traditional flavors. Enjoy making it as a hearty meal for any time of the day!
