  • Add chopped onions, green chilies, garlic, and curry leaves. Sauté until the onions turn translucent.

  • Add turmeric powder, red chili powder, and a pinch of salt. Mix well.
  • Slowly add gram flour, stirring continuously to prevent lumps. Roast the gram flour until it smells nutty and cooked, about 3-5 minutes.
  • Gradually add water while stirring continuously to maintain a semi-dry consistency. Cook for an additional 5-7 minutes.
  • Check seasoning and adjust according to taste. Garnish with chopped coriander.

  • In a mixing bowl, combine the flour and salt. Gradually add water and knead into a soft, pliable dough.
  • Divide the dough into equal portions and roll each portion into balls.

  • Flatten each ball and roll it into a round disk, similar to a roti but slightly thicker.
  • Heat a griddle or tawa, and place the rolled dough onto it. Cook on medium heat until spots appear, then flip.
  • Apply a little oil on each side and press slightly using a spatula to ensure even cooking and puffing.
  • Cook until both sides are golden brown and the bhakar is properly cooked.

  • Serve hot Zunka with warm Bhakar. This meal is typically enjoyed with a side of raw onion and green chili for added flavor.
