Ingredients:

For the Misal:

  • Mixed sprouts (moth beans, matki, mung): 200 grams, soaked and cooked

  • Farsan or Sev: 100 grams
  • Onion: 50 grams, finely chopped
  • Lemon: Cut into wedges
  • Coriander leaves (Cilantro): 15 grams, chopped
  • Pav (bread rolls): 8

Instructions:

1. Prepare the Misal Base:

  • Heat oil in a large pot over medium heat.
  • Add mustard seeds, cumin seeds, and asafoetida. Let them sputter.
  • Add chopped onions and sauté until they turn translucent.
  • Stir in ginger-garlic paste and curry leaves, cooking until the raw smell fades.
  • Add chopped tomatoes, cook until they soften and oil begins to separate.
  • Sprinkle in turmeric powder, red chili powder, coriander powder, and Goda Masala. Mix well.

2. Cook the Sprouts:

  • Add the cooked sprouts to the masala mix. Stir to combine all the ingredients well.
  • Pour in water and season with salt. Bring the mixture to a boil, then reduce to a simmer for about 10 minutes, allowing the flavors to meld together.
  • Adjust the consistency according to your preference; it should be slightly watery.

3. Assemble the Misal:

  • In a serving bowl, ladle the hot Misal.
  • Top with a handful of farsan or sev, and fresh chopped onions.
  • Garnish with chopped coriander.

4. Serve:

  • Serve hot, accompanied by lemon wedges and warm pav.
  • Optionally, you can also serve yogurt or buttermilk to help offset the spice.
