Ingredients:
For the Misal:
- Mixed sprouts (moth beans, matki, mung): 200 grams, soaked and cooked
- Onion: 100 grams, finely chopped
- Tomatoes: 150 grams, finely chopped
- Ginger-garlic paste: 15 grams
- Mustard seeds: 5 grams
- Cumin seeds: 5 grams
- Curry leaves: 5 grams
- Asafoetida (Hing): A pinch
- Turmeric powder: 2 grams

- Coriander powder: 5 grams
- Salt: to taste
- Oil: 30 grams
- Water: 400 ml, or as needed to adjust consistency

- Farsan or Sev: 100 grams
- Onion: 50 grams, finely chopped
- Lemon: Cut into wedges
- Coriander leaves (Cilantro): 15 grams, chopped
- Pav (bread rolls): 8
Instructions:
1. Prepare the Misal Base:
- Heat oil in a large pot over medium heat.
- Add mustard seeds, cumin seeds, and asafoetida. Let them sputter.
- Add chopped onions and sauté until they turn translucent.
- Stir in ginger-garlic paste and curry leaves, cooking until the raw smell fades.
- Add chopped tomatoes, cook until they soften and oil begins to separate.
- Sprinkle in turmeric powder, red chili powder, coriander powder, and Goda Masala. Mix well.
2. Cook the Sprouts:
- Add the cooked sprouts to the masala mix. Stir to combine all the ingredients well.
- Pour in water and season with salt. Bring the mixture to a boil, then reduce to a simmer for about 10 minutes, allowing the flavors to meld together.
- Adjust the consistency according to your preference; it should be slightly watery.
3. Assemble the Misal:
- In a serving bowl, ladle the hot Misal.
- Top with a handful of farsan or sev, and fresh chopped onions.
- Garnish with chopped coriander.
4. Serve:
- Serve hot, accompanied by lemon wedges and warm pav.
- Optionally, you can also serve yogurt or buttermilk to help offset the spice.
