Masale Bhaat is a vibrant and aromatic Maharashtrian spiced rice dish often made during festivals and special occasions. This recipe uses a variety of vegetables and goda masala to deliver a uniquely flavorful dish. Here’s how you can prepare it for 4 servings, with measurements provided in grams.

Ingredients:

Rice and Vegetables:

  • Rice (preferably Basmati): 300 grams, washed and soaked for 30 minutes
  • Mixed vegetables (carrots, peas, green beans, cauliflower, potato): 250 grams, chopped
  • Ghee or Oil: 30 grams
  • Mustard seeds: 5 grams
  • Cumin seeds: 5 grams
  • Asafoetida (Hing): A pinch
  • Curry leaves: 5 grams
  • Turmeric powder: 2 grams
  • Goda masala: 15 grams
  • Salt: to taste
  • Water: 600 ml

For Garnish:

  • Grated fresh coconut: 20 grams
  • Coriander leaves: 10 grams, chopped
  • Lemon wedges: for serving

Instructions:

1. Prepare the Rice:

  • Drain the soaked rice and set it aside.

2. Cook the Vegetables and Spices:

  • Heat ghee or oil in a large pan or pressure cooker. Add mustard seeds and let them pop.
  • Add cumin seeds, asafoetida, and curry leaves, and sauté for a few seconds.
  • Add the chopped vegetables and stir-fry for about 2-3 minutes.
  • Sprinkle turmeric powder and goda masala over the vegetables, and stir to coat evenly.

3. Add the Rice:

  • Add the drained rice to the pan and gently mix with the vegetables and spices, ensuring the rice is well-coated with the masala.
  • Pour in water and add salt to taste. Stir gently.

4. Cook the Masale Bhaat:

  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer until the rice is cooked and all the water has been absorbed (about 15-18 minutes). If using a pressure cooker, cook for 2 whistles then turn off the heat.
  • Remove from heat and let it sit covered for another 10 minutes.

5. Garnish and Serve:

  • Fluff the rice gently with a fork.
  • Garnish with grated coconut and chopped coriander leaves.
  • Serve hot with lemon wedges on the side.
