Gatte ki sabzi recipe
Here’s a recipe for Gatte ki Sabzi to serve 4 people:
Ingredients:
For Gatte (Dumplings):
- 1 cup gram flour (besan)
- 1/2 teaspoon carom seeds (ajwain)
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons yogurt
- Water as needed
- 2 tablespoons ghee (clarified butter)
For Curry:
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 cup yogurt
- Fresh coriander leaves for garnish
Instructions:
For Gatte (Dumplings):
- In a mixing bowl, combine gram flour, carom seeds, red chili powder, turmeric powder, salt, and yogurt.
- Gradually add water and knead into a firm dough.
- Divide the dough into equal portions and roll them into cylindrical shapes to make the gatte.
- Bring a large pot of water to boil and add the gatte.
- Boil for about 10-12 minutes until the gatte float to the surface and are cooked through.
- Remove the cooked gatte from water and slice them into small pieces.
For Curry:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Stir in ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add yogurt and stir continuously to prevent curdling.
- Add the sliced gatte to the curry and mix gently.
- Simmer for 5-7 minutes until the curry thickens and the gatte absorb the flavors.
- Garnish with fresh coriander leaves.
