Here’s a recipe for Dal Baati Churma to serve 4 people:

Ingredients:

For Baati:

  • 2 cups whole wheat flour
  • 1/4 cup semolina (sooji)
  • 1/4 cup ghee (clarified butter)
  • Salt to taste
  • Water for kneading dough

For Dal:

  • 1 cup split yellow lentils (toor dal)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee (clarified butter)
  • Fresh coriander leaves for garnish

For Churma:

  • 1 cup coarsely ground wheat flour
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup powdered jaggery (gur)
  • 1/2 teaspoon cardamom powder
  • Almonds and pistachios for garnish (optional)

Instructions:

For Baati:

  1. In a large mixing bowl, combine whole wheat flour, semolina, ghee, and salt.
  2. Gradually add water and knead into a stiff dough.
  3. Divide the dough into equal portions and shape them into balls.
  4. Preheat the oven to 180°C (350°F).
  5. Place the dough balls on a baking tray and bake for 35-40 minutes or until golden brown and cooked through.

For Dal:

  1. Rinse the toor dal thoroughly and pressure cook with water, turmeric powder, and salt until soft and mushy.
  2. Heat ghee in a pan and sauté chopped onions until golden brown.
  3. Add ginger-garlic paste and green chilies, and sauté for a minute.
  4. Stir in chopped tomatoes and cook until they turn soft.
  5. Add turmeric powder, red chili powder, coriander powder, and garam masala. Cook for another 2-3 minutes.
  6. Add cooked dal to the masala and simmer for 5-10 minutes. Adjust consistency by adding water if needed.
  7. Garnish with fresh coriander leaves.

For Churma:

  1. Heat ghee in a pan and roast coarsely ground wheat flour until golden brown and aromatic.
  2. Remove from heat and let it cool slightly.
  3. Add powdered jaggery and cardamom powder to the roasted flour and mix well.
  4. Shape the mixture into small ladoos or serve as a crumbly mixture.
  5. Garnish with chopped almonds and pistachios if desired.

Serve hot Baati with Dal and Churma for a delicious Rajasthani meal. Enjoy!
