Ingredients:

For the dough:

  • 250g all-purpose flour
  • 50g sugar
  • 1 teaspoon instant yeast
  • 1/4 teaspoon salt
  • 1 large egg
  • 50ml milk
  • 50g unsalted butter, softened

For the cookie crust:

  • 75g unsalted butter, softened
  • 100g sugar
  • 1 egg
  • 200g all-purpose flour
  • 1/2 teaspoon baking powder
  • Green food coloring (optional for coloring)

Instructions:

  1. Prepare the dough:
  • In a mixing bowl, combine the flour, sugar, instant yeast, and salt.
  • Add the egg and milk to the dry ingredients and mix until a dough forms.
  • Add the softened butter and knead the dough until it becomes smooth and elastic.
  • Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
  1. Prepare the cookie crust:
  • In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the egg and mix well.
  • Sift in the flour and baking powder, then mix until combined.
  • Optionally, add green food coloring to achieve the desired color for the melonpan.
  1. Assemble the Melonpan:
  • Divide the dough into 8 equal portions and shape them into balls.
  • Divide the cookie crust dough into 8 portions as well.
  • Flatten each cookie crust portion into a circle large enough to cover the dough balls.
  • Place a flattened cookie crust dough over each dough ball, covering it completely.
  1. Score the Melonpan:
  • Use a knife to score crisscross patterns on the surface of each melonpan to resemble a melon’s texture.
  1. Bake:
  • Preheat the oven to 180°C (350°F).
  • Place the scored melonpan on a baking sheet lined with parchment paper.
  • Bake for about 12-15 minutes or until the cookie crust is golden brown and the bread is cooked through.
  1. Serve:
  • Allow the melonpan to cool slightly before serving.
