Melonpan recipe

Ingredients:
For the dough:
- 250g all-purpose flour
- 50g sugar
- 1 teaspoon instant yeast
- 1/4 teaspoon salt
- 1 large egg
- 50ml milk
- 50g unsalted butter, softened
For the cookie crust:
- 75g unsalted butter, softened
- 100g sugar
- 1 egg
- 200g all-purpose flour
- 1/2 teaspoon baking powder
- Green food coloring (optional for coloring)
Instructions:
- Prepare the dough:
- In a mixing bowl, combine the flour, sugar, instant yeast, and salt.
- Add the egg and milk to the dry ingredients and mix until a dough forms.
- Add the softened butter and knead the dough until it becomes smooth and elastic.
- Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
- Prepare the cookie crust:
- In a separate bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and mix well.
- Sift in the flour and baking powder, then mix until combined.
- Optionally, add green food coloring to achieve the desired color for the melonpan.
- Assemble the Melonpan:
- Divide the dough into 8 equal portions and shape them into balls.
- Divide the cookie crust dough into 8 portions as well.
- Flatten each cookie crust portion into a circle large enough to cover the dough balls.
- Place a flattened cookie crust dough over each dough ball, covering it completely.
- Score the Melonpan:
- Use a knife to score crisscross patterns on the surface of each melonpan to resemble a melon’s texture.
- Bake:
- Preheat the oven to 180°C (350°F).
- Place the scored melonpan on a baking sheet lined with parchment paper.
- Bake for about 12-15 minutes or until the cookie crust is golden brown and the bread is cooked through.
- Serve:
- Allow the melonpan to cool slightly before serving.
