Here’s a recipe for Cream Pan to serve 4 people:
Ingredients:
For the bread dough:
- 400g bread flour
- 7g instant yeast
- 50g sugar
- 7g salt
- 240ml warm milk
- 40g unsalted butter, softened
For the custard filling:
- 300ml milk
- 3 egg yolks
- 50g sugar
- 20g cornstarch
- 1 teaspoon vanilla extract
For topping:
- Powdered sugar for dusting
Instructions:
- Prepare the bread dough:
- In a large mixing bowl, combine bread flour, instant yeast, sugar, and salt.
- Gradually add warm milk and mix until a dough forms.
- Knead the dough for about 8-10 minutes until smooth and elastic.
- Add softened butter and continue kneading until well incorporated.
- Cover the dough with a clean kitchen towel and let it rise in a warm place for about 1 hour or until doubled in size.
- Prepare the custard filling:
- In a saucepan, heat milk over medium heat until it’s hot but not boiling.
- In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
- Remove from heat, stir in vanilla extract, and let the custard cool completely.
- Assemble the Cream Pan:
- Punch down the risen dough and divide it into 8 equal portions. Shape each portion into a ball.
- Flatten each dough ball into a circle and place a spoonful of custard filling in the center.
- Gather the edges of the dough and pinch tightly to seal, shaping it into a smooth ball.
- Place the filled dough balls on a baking sheet lined with parchment paper, leaving some space between each.
- Proof and bake:
- Cover the filled dough balls with a clean kitchen towel and let them proof for about 30-45 minutes, or until slightly puffed.
- Preheat the oven to 180°C (350°F).
- Bake the Cream Pan for 15-20 minutes or until they are golden brown on top and cooked through.
- Serve:
- Remove the Cream Pan from the oven and let them cool slightly on a wire rack.
- Dust the tops with powdered sugar before serving.
