Anpan recipe
Here’s a recipe for Anpan to serve 4 people:
Ingredients:
For the dough:
- 300g bread flour
- 50g sugar
- 1 teaspoon instant yeast
- 1/4 teaspoon salt
- 1 large egg
- 150ml milk
- 50g unsalted butter, softened
For the red bean paste (Anko):
- 200g adzuki beans
- 150g sugar
- 1/4 teaspoon salt
- Water
Instructions:
- Prepare the red bean paste (Anko):
- Rinse the adzuki beans under cold water.
- In a large pot, cover the adzuki beans with water and bring to a boil.
- Reduce heat and simmer for about 1-1.5 hours or until the beans are soft and easily mashed.
- Drain the cooked beans and return them to the pot.
- Add sugar and salt to the pot with the beans and cook over low heat, stirring constantly until the mixture thickens to a paste-like consistency.
- Let the anko cool completely.
- Prepare the dough:
- In a mixing bowl, combine the bread flour, sugar, instant yeast, and salt.
- Add the egg and milk to the dry ingredients and mix until a dough forms.
- Add the softened butter and knead the dough until it becomes smooth and elastic.
- Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
- Shape and fill the Anpan:
- Divide the dough into 8 equal portions and shape them into balls.
- Divide the anko into 8 portions as well.
- Flatten each dough ball into a circle and place a portion of anko in the center.
- Gather the edges of the dough and seal tightly, shaping it into a smooth ball.
- Proof and Bake:
- Place the shaped anpan on a baking sheet lined with parchment paper, leaving some space between each.
- Cover with a clean kitchen towel and let them proof for about 30-45 minutes, or until slightly puffed.
- Bake:
- Preheat the oven to 180°C (350°F).
- Bake the anpan for 15-20 minutes or until they are golden brown on top and cooked through.
- Serve:
- Allow the anpan to cool slightly before serving.
