  • 2 cups chopped kale, stems removed
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional, for extra heat)

Instructions:

  1. In a large soup pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into smaller pieces with a spoon as it cooks, until browned and cooked through. Remove any excess fat.
  2. Add diced onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Pour in chicken broth and water, then add diced potatoes. Bring the soup to a simmer and cook until the potatoes are tender, about 10-15 minutes.
