Here’s a simple chicken coconut soup recipe:

Ingredients:

  • 1 lb (about 450g) chicken, diced
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken broth
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 carrot, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • Fresh cilantro and lime wedges for garnish

Instructions:

  1. In a large pot, heat vegetable oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until fragrant.
  2. Add diced chicken to the pot and cook until browned.
  3. Pour in coconut milk and chicken broth. Bring to a simmer.
  4. Add sliced bell pepper, carrot, and mushrooms to the pot. Stir well.
  5. Season the soup with fish sauce and soy sauce. Adjust according to taste.
  6. Simmer the soup for about 15-20 minutes, allowing the flavors to meld.
  7. Serve hot, garnished with fresh cilantro and lime wedges.
