Here’s a basic recipe for Velouté sauce:

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • Salt and white pepper to taste
  • Optional: a pinch of nutmeg

Instructions:

  1. In a saucepan, melt the butter over medium heat.
  2. Add the flour and stir continuously to create a smooth roux. Cook for 2-3 minutes, but avoid letting it brown.
  3. Gradually whisk in the chicken or vegetable broth to avoid lumps. Continue stirring until the mixture thickens.
  4. Simmer the sauce over low heat for about 10-15 minutes, stirring occasionally.
  5. Season with salt, white pepper, and a pinch of nutmeg to taste.
