Srilankan pumpkin curry recipe
Here’s a simple Sri Lankan Pumpkin Curry recipe:
Ingredients:
- 500g pumpkin, peeled and cubed
- 1 onion, finely chopped
- 2-3 green chilies, sliced
- 2 cloves garlic, minced
- 1 sprig curry leaves
- 1 cinnamon stick
- 2 cardamom pods
- 1 teaspoon mustard seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 cup coconut milk
- Salt to taste
- 2 tablespoons oil
Instructions:
- Heat oil in a pan and add mustard seeds, fenugreek seeds, curry leaves, cinnamon stick, and cardamom pods. Let them splutter and release their aroma.
- Add chopped onions and green chilies. Sauté until onions are golden brown.
- Add minced garlic and continue sautéing for a minute.
- Mix in turmeric powder and chili powder. Stir well.
- Add pumpkin cubes and coat them with the spices.
- Pour in coconut milk, add salt, and bring the mixture to a boil.
- Reduce the heat, cover the pan, and let it simmer until the pumpkin is tender. Stir occasionally.
- Once the pumpkin is cooked and the curry has thickened, remove from heat.
- Serve the Sri Lankan Pumpkin Curry with rice or roti.
