Here’s a simple Sri Lankan Pumpkin Curry recipe:

Ingredients:

  • 500g pumpkin, peeled and cubed
  • 1 onion, finely chopped
  • 2-3 green chilies, sliced
  • 2 cloves garlic, minced
  • 1 sprig curry leaves
  • 1 cinnamon stick
  • 2 cardamom pods
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 cup coconut milk
  • Salt to taste
  • 2 tablespoons oil

Instructions:

  1. Heat oil in a pan and add mustard seeds, fenugreek seeds, curry leaves, cinnamon stick, and cardamom pods. Let them splutter and release their aroma.
  2. Add chopped onions and green chilies. Sauté until onions are golden brown.
  3. Add minced garlic and continue sautéing for a minute.
  4. Mix in turmeric powder and chili powder. Stir well.
  5. Add pumpkin cubes and coat them with the spices.
  6. Pour in coconut milk, add salt, and bring the mixture to a boil.
  7. Reduce the heat, cover the pan, and let it simmer until the pumpkin is tender. Stir occasionally.
  8. Once the pumpkin is cooked and the curry has thickened, remove from heat.
  9. Serve the Sri Lankan Pumpkin Curry with rice or roti.
