Here’s a simple Sri Lankan Lamb Curry recipe for you:

Ingredients:

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 3 tablespoons Sri Lankan curry powder
  • 1 tablespoon chili powder (adjust to taste)
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 4-5 curry leaves
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 4 cloves
  • 1 cup coconut milk
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh coriander for garnish

Instructions:

  1. Heat oil in a large pot. Add chopped onions and sauté until golden brown.
  2. Add minced garlic, minced ginger, curry leaves, cinnamon sticks, cardamom pods, and cloves. Sauté for a minute until fragrant.
  3. Add lamb cubes to the pot and brown them on all sides.
  4. Stir in Sri Lankan curry powder, chili powder, ground coriander, and ground cumin. Mix well to coat the lamb evenly with the spices.
  5. Add chopped tomatoes and cook until they become soft and the mixture thickens.
  6. Pour in coconut milk, season with salt, and bring the curry to a simmer.
  7. Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the lamb is tender.
  8. Once the lamb is cooked, check the seasoning and adjust if needed. Garnish with fresh coriander.
  9. Serve the Sri Lankan lamb curry with rice or flatbread.
