Srilankan lamb curry recipe

Ingredients:
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 3 tablespoons Sri Lankan curry powder
- 1 tablespoon chili powder (adjust to taste)
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 4-5 curry leaves
- 2 cinnamon sticks
- 4 cardamom pods
- 4 cloves
- 1 cup coconut milk
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh coriander for garnish
Instructions:
- Heat oil in a large pot. Add chopped onions and sauté until golden brown.
- Add minced garlic, minced ginger, curry leaves, cinnamon sticks, cardamom pods, and cloves. Sauté for a minute until fragrant.
- Add lamb cubes to the pot and brown them on all sides.
- Stir in Sri Lankan curry powder, chili powder, ground coriander, and ground cumin. Mix well to coat the lamb evenly with the spices.
- Add chopped tomatoes and cook until they become soft and the mixture thickens.
- Pour in coconut milk, season with salt, and bring the curry to a simmer.
- Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the lamb is tender.
- Once the lamb is cooked, check the seasoning and adjust if needed. Garnish with fresh coriander.
