Here’s a simple raspberry puree recipe:

Ingredients:

  • 300 grams of fresh raspberries
  • 2-3 tablespoons of granulated sugar (adjust to taste)
  • 1 tablespoon of lemon juice (optional)

Instructions:

  1. Wash the raspberries thoroughly and remove any stems.
  2. In a saucepan, combine the raspberries and sugar over medium heat.
  3. Cook the raspberries, stirring occasionally, until they start to break down and release their juices. This usually takes about 5-7 minutes.
  4. If using, add lemon juice to enhance the flavor and balance the sweetness.
  5. Mash the raspberries with a fork or potato masher to achieve a smoother consistency.
  6. Continue to cook for another 5-10 minutes, or until the mixture thickens slightly.
  7. Remove the saucepan from heat and let the raspberry puree cool.
  8. Once cooled, you can strain the puree to remove seeds if desired, or leave it as is for a more rustic texture.
  9. Store the raspberry puree in a sealed container in the refrigerator.
