Here’s a simple mixed berry compote recipe:

Ingredients:

  • 200g strawberries, hulled and halved
  • 100g blueberries
  • 100g raspberries
  • 50g blackberries
  • 100g granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions:

  1. In a saucepan, combine the strawberries, blueberries, raspberries, blackberries, granulated sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the berries release their juices and the sugar dissolves.
  3. Once the mixture comes to a simmer, reduce the heat to low and let it cook for about 10-15 minutes or until the berries are soft and the liquid has thickened slightly.
  4. Remove the compote from heat and stir in the vanilla extract.
  5. Allow the compote to cool before transferring it to a jar or container.
  6. Refrigerate until ready to use.

This compote is versatile and can be used as a topping for pancakes, waffles, yogurt, or ice cream. Adjust the sugar quantity based on your sweetness preference.
