Here’s a simple Hollandaise sauce recipe:

Ingredients:

  • 3 egg yolks
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • 1 cup unsalted butter, melted
  • Salt and cayenne pepper to taste

Instructions:

  1. In a heatproof bowl, whisk together egg yolks, water, and lemon juice.
  2. Place the bowl over a pot of simmering water (double boiler), ensuring the water doesn’t touch the bottom of the bowl.
  3. Continue whisking the egg mixture until it thickens and doubles in volume.
  4. Slowly drizzle in the melted butter while constantly whisking until the sauce has a smooth consistency.
  5. Season with salt and cayenne pepper to taste.
  6. Remove from heat and serve immediately.
