Ingredients:

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef or veal stock
  • 1/2 cup red wine
  • 1 bay leaf
  • 1 sprig thyme
  • Salt and pepper to taste

Instructions:

  1. In a saucepan, melt butter over medium heat. Add the flour, stirring constantly to form a roux. Cook for a few minutes until the roux turns a light brown color.
  2. Add the chopped onion, carrot, celery, and garlic to the roux. Cook until the vegetables are softened.
  3. Stir in the tomato paste and cook for an additional 2-3 minutes.
  4. Gradually add the red wine, stirring constantly to avoid lumps.
  5. Slowly pour in the stock while continuing to stir to combine all the ingredients.
  6. Add the bay leaf and thyme, then bring the mixture to a simmer. Reduce heat and let it simmer for about 30-40 minutes, allowing the flavors to meld.
  7. Strain the sauce through a fine-mesh sieve to remove solids. Season with salt and pepper to taste.
