Here’s a simple recipe for Béarnaise sauce:

Ingredients:

  • 3 egg yolks
  • 1 tablespoon white wine vinegar
  • 1 tablespoon fresh tarragon, chopped
  • 1 tablespoon shallots, finely chopped
  • 1/2 cup (1 stick) unsalted butter, melted
  • Salt and pepper to taste
  • Lemon juice (optional)

Instructions:

  1. In a heatproof bowl, whisk together the egg yolks, white wine vinegar, tarragon, and shallots.
  2. Place the bowl over a pot of simmering water (double boiler), ensuring the water doesn’t touch the bottom of the bowl.
  3. Continue whisking the egg mixture until it thickens slightly.
  4. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens to your desired consistency.
  5. Remove the bowl from heat and season the sauce with salt and pepper. Add a splash of lemon juice if desired for brightness.
  6. Strain the sauce to remove any solids, if preferred.
  7. Serve the Béarnaise sauce immediately over grilled steak, fish, or vegetables.
