Sure, here’s a simple Tom Yum Soup recipe for 4 servings:

Ingredients:

  • 1 quart (4 cups) chicken or vegetable broth
  • 200g (7 oz) shrimp, peeled and deveined
  • 200g (7 oz) mushrooms, sliced
  • 2 tomatoes, cut into wedges
  • 1 stalk lemongrass, cut into 2-inch pieces and smashed
  • 3 kaffir lime leaves
  • 3 Thai bird chilies, smashed (adjust to taste)
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon oil
  • 1 tablespoon sugar
  • Fresh cilantro leaves for garnish

Instructions:

  1. In a pot, heat oil over medium heat. Add lemongrass, kaffir lime leaves, and Thai bird chilies. Sauté for a minute to release the flavors.
  2. Pour in the broth and bring it to a simmer. Add mushrooms and tomatoes. Cook for about 5 minutes until mushrooms are tender.
  3. Add shrimp and cook until they turn pink and opaque.
  4. Stir in fish sauce, lime juice, soy sauce, and sugar. Adjust the seasoning to your liking.
  5. Remove lemongrass, kaffir lime leaves, and Thai bird chilies before serving.
  6. Ladle the soup into bowls and garnish with fresh cilantro leaves.
