Selroti and Achhar
here’s a simple recipe for Selroti and Achar:
Selroti:
Ingredients:
- 2 cups rice flour
- 1/2 cup soaked and ground rice
- 1/2 cup yogurt
- 1/2 teaspoon baking soda
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon sugar
- Oil for deep frying
Instructions:
- Mix rice flour, soaked and ground rice, yogurt, baking soda, turmeric powder, cumin powder, and sugar in a bowl to form a thick batter.
- Let the batter ferment for at least 8 hours or overnight.
- Heat oil in a pan for deep frying.
- Pour the batter into a funnel or plastic squeeze bottle to form a spiral shape directly into the hot oil.
- Fry until golden brown and crispy.
- Remove from oil and drain excess oil on paper towels.
Achar (Nepali Pickle):
Ingredients:
- 2 cups chopped mixed vegetables (carrots, cucumber, radish, etc.)
- 1/4 cup mustard oil
- 1 tablespoon fenugreek seeds
- 1 tablespoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 1 tablespoon vinegar
Instructions:
- Heat mustard oil until it smokes, then cool it to room temperature.
- In a separate pan, dry roast fenugreek seeds and mustard seeds until fragrant, then grind into a powder.
- Mix chopped vegetables, mustard oil, ground spice powder, turmeric powder, red chili powder, and salt in a bowl.
- Add vinegar and mix well.
- Store in an airtight container and let it sit for at least a day for the flavors to meld.
