Paella is a traditional Spanish dish originating from Valencia. Here’s a simple seafood paella recipe for 4 servings:

Ingredients:

  • 1 cup Arborio rice
  • 400g mixed seafood (shrimp, mussels, squid)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • 2 cups chicken or vegetable broth
  • 1/4 cup white wine
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a paella pan or large skillet over medium heat.
  2. Sauté onions, garlic, and bell pepper until softened.
  3. Add diced tomatoes and cook until they break down.
  4. Stir in Arborio rice, saffron, and smoked paprika, coating the rice in the mixture.
  5. Pour in white wine and let it simmer until mostly evaporated.
  6. Add broth, season with salt and pepper, and bring to a boil.
  7. Reduce heat to low, arrange seafood over the rice, and simmer until rice is cooked and seafood is done.
  8. Allow the paella to rest for a few minutes before serving.
  9. Garnish with fresh parsley and serve with lemon wedges.
