Seafood paella
Paella is a traditional Spanish dish originating from Valencia. Here’s a simple seafood paella recipe for 4 servings:
Ingredients:
- 1 cup Arborio rice
- 400g mixed seafood (shrimp, mussels, squid)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon saffron threads
- 1 teaspoon smoked paprika
- 2 cups chicken or vegetable broth
- 1/4 cup white wine
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon wedges for serving
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a paella pan or large skillet over medium heat.
- Sauté onions, garlic, and bell pepper until softened.
- Add diced tomatoes and cook until they break down.
- Stir in Arborio rice, saffron, and smoked paprika, coating the rice in the mixture.
- Pour in white wine and let it simmer until mostly evaporated.
- Add broth, season with salt and pepper, and bring to a boil.
- Reduce heat to low, arrange seafood over the rice, and simmer until rice is cooked and seafood is done.
- Allow the paella to rest for a few minutes before serving.
- Garnish with fresh parsley and serve with lemon wedges.
