Here’s a simple seafood chowder recipe for 4 servings:

Ingredients:

  • 1 lb mixed seafood (shrimp, scallops, and/or fish)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 4 cups fish or vegetable broth
  • 1 cup corn kernels
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, melt butter over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. Add diced carrots and potatoes to the pot, cook for a few minutes until they start to soften.
  3. Pour in the fish or vegetable broth, bring to a simmer, and let the vegetables cook until tender.
  4. Add the mixed seafood and corn to the pot, cook until the seafood is just cooked through.
  5. Pour in the heavy cream, stirring gently. Season with salt and pepper to taste.
  6. Let the chowder simmer for a few more minutes until heated through.
  7. Serve the seafood chowder hot, garnished with fresh parsley.
