Pani Puri Dough Recipe:

Ingredients:

  • 1 cup semolina (sooji)
  • 1/4 cup all-purpose flour (maida)
  • A pinch of baking soda
  • Water (as needed)
  • Salt to taste

Instructions:

  1. In a bowl, mix semolina, all-purpose flour, baking soda, and salt.
  2. Gradually add water and knead to form a smooth, stiff dough.
  3. Cover the dough and let it rest for 15-20 minutes.
  4. Divide the dough into small balls and roll them into puris.

Pani (Water) Recipes:

  1. Minty Tamarind Pani:
  • 1 cup mint leaves
  • 1/2 cup coriander leaves
  • 1 green chili
  • 1/2 cup tamarind pulp
  • 1 tsp cumin powder
  • Salt to taste
  • Blend all ingredients, strain, and dilute with water.
  1. Spicy Masala Pani:
  • 1 tbsp roasted cumin powder
  • 1 tsp black salt
  • 1/2 tsp red chili powder
  • 1/2 tsp chaat masala
  • 1 lemon juice
  • Salt to taste
  • Mix all ingredients and dilute with water.
  1. Sweet Date Tamarind Pani:
  • 1/2 cup tamarind pulp
  • 1/4 cup date paste
  • 2 tbsp jaggery
  • 1 tsp roasted cumin powder
  • Salt to taste
  • Blend tamarind, date paste, jaggery, and cumin. Strain and dilute.
  1. Fruity Pani:
  • 1/2 cup pineapple juice
  • 1/2 cup orange juice
  • 1/4 cup lemon juice
  • 1/2 tsp black salt
  • 1/2 tsp chaat masala
  • Salt to taste
  • Mix all juices, add black salt, chaat masala, and salt. Dilute with water.
