NEPLESE PORK CURRY
Ingredients:
- 500g pork, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- 3 tbsp oil
- Fresh cilantro for garnish
Instructions:
- Heat oil in a pan and sauté chopped onions until golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for a couple of minutes.
- Add pork cubes and brown them on all sides.
- Stir in cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- Add chopped tomatoes and cook until they turn soft.
- Pour in enough water to cover the pork and bring to a boil. Reduce heat, cover, and simmer until the pork is tender (about 45-60 minutes).
- Sprinkle garam masala and garnish with fresh cilantro before serving.
- Serve hot with rice or flatbread.
