To make Nepali Pork Sekuwa, you’ll need:

Ingredients:

  • 500g boneless pork, cut into cubes
  • 2 tablespoons yogurt
  • 2 tablespoons mustard oil
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Skewers for grilling

Instructions:

  1. In a bowl, mix yogurt, mustard oil, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt to create a marinade.
  2. Add the pork cubes to the marinade, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 2 hours, or preferably overnight.
  3. Preheat your grill or oven.
  4. Thread the marinated pork cubes onto skewers.
  5. Grill the skewers, turning occasionally, until the pork is cooked through and has a nice char on the outside.
  6. Serve hot with naan or rice, and optionally with a side of mint chutney.
