Mulgatwany soup
Ingredients:
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 1 garlic clove, minced
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 cup red lentils, rinsed
- 4 cups chicken or vegetable broth
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup cooked chicken, shredded (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, carrot, and celery. Cook until the vegetables are softened.
- Add the minced garlic, curry powder, cumin, coriander, and turmeric. Stir well to coat the vegetables with the spices.
- Pour in the red lentils and chicken or vegetable broth. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20 minutes or until the lentils are tender.
- Add the diced tomatoes and cooked chicken (if using) to the pot. Simmer for an additional 5-10 minutes.
- Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
- Ladle the Mulgatwany soup into bowls, and garnish with fresh cilantro.
