Mulgatwany soup

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 garlic clove, minced
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 cup red lentils, rinsed
  • 4 cups chicken or vegetable broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup cooked chicken, shredded (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, carrot, and celery. Cook until the vegetables are softened.
  2. Add the minced garlic, curry powder, cumin, coriander, and turmeric. Stir well to coat the vegetables with the spices.
  3. Pour in the red lentils and chicken or vegetable broth. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20 minutes or until the lentils are tender.
  4. Add the diced tomatoes and cooked chicken (if using) to the pot. Simmer for an additional 5-10 minutes.
  5. Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  6. Ladle the Mulgatwany soup into bowls, and garnish with fresh cilantro.
