HONEY MUSTARD POTATO
Ingredients:
- 4 large potatoes, washed and diced
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons whole grain mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, garlic powder, onion powder, salt, and pepper.
- Add the diced potatoes to the bowl and toss them until evenly coated with the honey mustard mixture.
- Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 25-30 minutes or until the potatoes are golden brown and crispy on the edges. Make sure to stir the potatoes halfway through the baking time for even cooking.
- Once done, remove the potatoes from the oven and transfer them to a serving dish.
- Garnish with chopped fresh parsley if desired.
