Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup raisins or currants

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the dry ingredients and use a pastry cutter or your fingers to cut it into the flour mixture until it resembles coarse crumbs.
  4. If you’re using raisins or currants, fold them into the mixture.
  5. In a separate bowl, mix together the milk and vanilla extract.
  6. Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; the dough should be slightly sticky.
  7. Turn the dough out onto a floured surface and gently knead it a few times. Pat the dough into a circle about 1 inch thick.
  8. Use a round cutter to cut out scones and place them on the prepared baking sheet.
  9. Bake for 12-15 minutes or until the tops are golden brown.
  10. Allow the scones to cool slightly before serving. Enjoy with clotted cream and jam!
