CHOCOLATE LAVA CAKE
Ingredients:
- 4 ounces (about 115 grams) semi-sweet or bittersweet chocolate, chopped
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup powdered sugar
- 2 large eggs
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- Pinch of salt
- Extra butter and cocoa powder for greasing and dusting the ramekins
Instructions:
- Preheat your oven to 425°F (220°C). Grease two 6-ounce ramekins with butter and dust with cocoa powder to prevent sticking.
- In a heatproof bowl, melt the chocolate and butter together. You can do this by placing the bowl over a pot of simmering water or using short intervals in the microwave. Stir until smooth.
- Remove the bowl from heat and whisk in the powdered sugar until well combined.
- Add the eggs and egg yolks one at a time, whisking well after each addition. Stir in the vanilla extract.
- Sift in the flour and a pinch of salt, then gently fold the dry ingredients into the chocolate mixture until just combined.
- Divide the batter evenly between the prepared ramekins.
- Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center is still soft.
- Carefully remove the lava cakes from the oven and let them cool for a minute. Run a knife around the edges and invert each cake onto a plate.
- Serve immediately, optionally dusted with powdered sugar or accompanied by a scoop of vanilla ice cream.
