CHICKEN QUESADILLA

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 medium-sized flour tortillas
  • Cooking oil for pan-frying

Instructions:

  1. In a bowl, mix the shredded chicken, cheddar cheese, Monterey Jack cheese, diced onions, diced bell peppers, cilantro, ground cumin, chili powder, garlic powder, salt, and pepper.
  2. Take one flour tortilla and spoon a portion of the chicken mixture onto one half of the tortilla.
  3. Fold the tortilla in half, covering the chicken mixture, and press down gently.
  4. Repeat the process for the remaining tortillas and filling.
  5. Heat a skillet over medium heat and add a small amount of cooking oil.
  6. Place a folded quesadilla in the skillet and cook until the tortilla is golden brown and the cheese is melted, usually 2-3 minutes per side.
  7. Repeat with the remaining quesadillas.
  8. Once cooked, remove from the skillet and let them cool for a minute before slicing into wedges.
  9. Serve the chicken quesadillas with your favorite toppings like salsa, guacamole, or sour cream.
