Nepali Chicken Curry Recipe

Ingredients:

  • 500g chicken, cut into pieces
  • 2 large onions, finely chopped
  • 3 tomatoes, pureed
  • 3 tablespoons vegetable oil
  • 2 teaspoons ginger-garlic paste
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat vegetable oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  3. Stir in cumin powder, coriander powder, turmeric powder, and red chili powder. Cook the spices for another 2 minutes.
  4. Add chicken pieces to the spice mix. Brown the chicken on all sides.
  5. Pour in the tomato puree and season with salt. Mix well and let it simmer for 15-20 minutes, allowing the chicken to cook through and absorb the flavors.
  6. Garnish with fresh coriander leaves before serving.
