MISO SOUP
Ingredients:
- 4 cups dashi (Japanese soup stock)
- 1/4 cup miso paste
- 1 cup tofu, diced
- 1 cup seaweed (wakame), rehydrated and chopped
- 2 green onions, thinly sliced
Instructions:
- Heat dashi in a pot over medium heat until hot but not boiling.
- In a small bowl, dissolve miso paste in a ladle or cup of dashi, ensuring no lumps remain.
- Add the dissolved miso back into the pot with the remaining dashi, stirring gently.
- Add tofu and seaweed, simmer for a few minutes until tofu is heated through.
- Garnish with sliced green onions before serving.
- Adjust miso paste quantity to taste and serve hot.
