MISO SOUP

Ingredients:

  • 4 cups dashi (Japanese soup stock)
  • 1/4 cup miso paste
  • 1 cup tofu, diced
  • 1 cup seaweed (wakame), rehydrated and chopped
  • 2 green onions, thinly sliced

Instructions:

  1. Heat dashi in a pot over medium heat until hot but not boiling.
  2. In a small bowl, dissolve miso paste in a ladle or cup of dashi, ensuring no lumps remain.
  3. Add the dissolved miso back into the pot with the remaining dashi, stirring gently.
  4. Add tofu and seaweed, simmer for a few minutes until tofu is heated through.
  5. Garnish with sliced green onions before serving.
  6. Adjust miso paste quantity to taste and serve hot.
