Here’s a simple recipe for passionfruit coulis:

Ingredients:

  • 150g fresh passionfruit pulp (about 6-8 passionfruits)
  • 75g granulated sugar
  • 30ml water
  • 1 teaspoon lemon juice (optional)

Instructions:

  1. Cut the passionfruits in half and scoop out the pulp into a bowl.
  2. In a saucepan, combine the passionfruit pulp, granulated sugar, water, and lemon juice (if using). Stir well over low heat until the sugar dissolves.
  3. Bring the mixture to a simmer and let it cook for about 5-7 minutes, stirring occasionally. The coulis should thicken slightly.
  4. Remove the saucepan from the heat and allow the coulis to cool.
  5. Once cooled, strain the coulis through a fine-mesh sieve to remove the seeds. Use the back of a spoon to press the mixture through the sieve.
  6. Transfer the strained coulis into a clean jar or container.
  7. Refrigerate the passionfruit coulis until ready to use. It can be stored for about a week.
