Bearnaise sauce recipe
Here’s a simple recipe for Béarnaise sauce:
Ingredients:
- 3 egg yolks
- 1 tablespoon white wine vinegar
- 1 tablespoon fresh tarragon, chopped
- 1 tablespoon shallots, finely chopped
- 1/2 cup (1 stick) unsalted butter, melted
- Salt and pepper to taste
- Lemon juice (optional)
Instructions:
- In a heatproof bowl, whisk together the egg yolks, white wine vinegar, tarragon, and shallots.
- Place the bowl over a pot of simmering water (double boiler), ensuring the water doesn’t touch the bottom of the bowl.
- Continue whisking the egg mixture until it thickens slightly.
- Slowly drizzle in the melted butter while whisking continuously until the sauce thickens to your desired consistency.
- Remove the bowl from heat and season the sauce with salt and pepper. Add a splash of lemon juice if desired for brightness.
- Strain the sauce to remove any solids, if preferred.
- Serve the Béarnaise sauce immediately over grilled steak, fish, or vegetables.
