Here’s a simple Hollandaise sauce recipe:
Ingredients:
- 3 egg yolks
- 1 tablespoon water
- 1 tablespoon lemon juice
- 1 cup unsalted butter, melted
- Salt and cayenne pepper to taste
Instructions:
- In a heatproof bowl, whisk together egg yolks, water, and lemon juice.
- Place the bowl over a pot of simmering water (double boiler), ensuring the water doesn’t touch the bottom of the bowl.
- Continue whisking the egg mixture until it thickens and doubles in volume.
- Slowly drizzle in the melted butter while constantly whisking until the sauce has a smooth consistency.
- Season with salt and cayenne pepper to taste.
- Remove from heat and serve immediately.
