Papdi Chaat Dough:
Ingredients:

  • 1 cup semolina (sooji)
  • 1/4 cup all-purpose flour (maida)
  • 1/4 cup ghee (clarified butter)
  • A pinch of baking soda
  • Salt to taste
  • Water as needed

Instructions:

  1. In a mixing bowl, combine semolina, all-purpose flour, ghee, baking soda, and salt.
  2. Gradually add water and knead the ingredients to form a stiff dough.
  3. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  4. Divide the dough into small portions and roll each portion into a ball.
  5. Roll out each ball into a thin disc, like a small puri.
  6. Prick the rolled dough with a fork to prevent puffing.
  7. Heat oil in a pan and fry the rolled dough until golden brown and crispy.
  8. Remove excess oil by placing the fried papdis on a paper towel.

Tamarind Chutney:
Ingredients:

  • 1 cup tamarind pulp
  • 1 cup jaggery (grated)
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Water as needed

Instructions:

  1. In a saucepan, combine tamarind pulp, jaggery, cumin powder, red chili powder, and salt.
  2. Cook the mixture on medium heat, stirring continuously, until the jaggery dissolves.
  3. Add water gradually to achieve the desired consistency.
  4. Simmer the chutney until it thickens to your liking.
  5. Allow it to cool and strain to remove any solids.

To assemble Papdi Chaat, arrange the fried papdis on a plate, top them with boiled potatoes, boiled chickpeas, yogurt, chopped onions, and coriander. Drizzle the tamarind chutney and sprinkle chaat masala for an extra burst of flavor. Enjoy your homemade Papdi Chaat!
