NEPLESE PORK CURRY

Ingredients:

  • 500g pork, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 3 tbsp oil
  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a pan and sauté chopped onions until golden brown.
  2. Add minced garlic, grated ginger, and green chilies. Sauté for a couple of minutes.
  3. Add pork cubes and brown them on all sides.
  4. Stir in cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
  5. Add chopped tomatoes and cook until they turn soft.
  6. Pour in enough water to cover the pork and bring to a boil. Reduce heat, cover, and simmer until the pork is tender (about 45-60 minutes).
  7. Sprinkle garam masala and garnish with fresh cilantro before serving.
  8. Serve hot with rice or flatbread.
