here’s a simple recipe for Selroti and Achar:

Selroti:

Ingredients:

  • 2 cups rice flour
  • 1/2 cup soaked and ground rice
  • 1/2 cup yogurt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon sugar
  • Oil for deep frying

Instructions:

  1. Mix rice flour, soaked and ground rice, yogurt, baking soda, turmeric powder, cumin powder, and sugar in a bowl to form a thick batter.
  2. Let the batter ferment for at least 8 hours or overnight.
  3. Heat oil in a pan for deep frying.
  4. Pour the batter into a funnel or plastic squeeze bottle to form a spiral shape directly into the hot oil.
  5. Fry until golden brown and crispy.
  6. Remove from oil and drain excess oil on paper towels.

Achar (Nepali Pickle):

Ingredients:

  • 2 cups chopped mixed vegetables (carrots, cucumber, radish, etc.)
  • 1/4 cup mustard oil
  • 1 tablespoon fenugreek seeds
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon vinegar

Instructions:

  1. Heat mustard oil until it smokes, then cool it to room temperature.
  2. In a separate pan, dry roast fenugreek seeds and mustard seeds until fragrant, then grind into a powder.
  3. Mix chopped vegetables, mustard oil, ground spice powder, turmeric powder, red chili powder, and salt in a bowl.
  4. Add vinegar and mix well.
  5. Store in an airtight container and let it sit for at least a day for the flavors to meld.
