Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup red wine (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 bay leaf
Instructions:
- Season chicken thighs with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Brown chicken on all sides. Remove chicken and set aside.
- In the same skillet, sauté onions until translucent. Add garlic and cook for another minute.
- Add bell pepper and mushrooms. Cook until vegetables are slightly tender.
- Pour in diced tomatoes, chicken broth, and red wine (if using). Stir in oregano, basil, thyme, and add the bay leaf.
- Return the browned chicken to the skillet. Bring the mixture to a simmer.
