Muhammara
Muhammara is a delicious Middle Eastern dip made with red peppers and walnuts. Here’s a simple recipe for 4 servings:
Ingredients:
- 4 large red bell peppers, roasted and peeled
- 1 cup walnuts, toasted
- 3 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 2 tablespoons tomato paste
- 1 tablespoon pomegranate molasses
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Roast the red peppers until the skin is charred. Once cooled, peel and remove seeds.
- In a food processor, combine the roasted red peppers, toasted walnuts, garlic, cumin, coriander, cayenne pepper, tomato paste, and pomegranate molasses.
- Pulse the ingredients until coarsely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture becomes a smooth paste.
- Season with salt and pepper to taste.
- Transfer the muhammara to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
