BEEF QUESADILLA

Ingredients:

  • 2 cups cooked and shredded beef
  • 2 cups shredded cheese (cheddar or a blend of Mexican cheeses)
  • 8 small flour tortillas
  • 1 cup diced bell peppers (red and green)
  • 1/2 cup diced onions
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cooking oil for pan-frying

Instructions:

  1. In a mixing bowl, combine shredded beef, shredded cheese, diced bell peppers, diced onions, ground cumin, chili powder, salt, and pepper. Mix well.
  2. Place a tortilla on a flat surface. Spoon a portion of the beef and cheese mixture onto one half of the tortilla, leaving a small border around the edges.
  3. Fold the other half of the tortilla over the filling, creating a half-moon shape.
  4. Heat a skillet or griddle over medium heat and add a small amount of cooking oil.
  5. Place the filled quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  6. Repeat the process for the remaining tortillas and filling.
  7. Once cooked, remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.

Serve the beef quesadillas with your favorite toppings such as salsa, guacamole, and sour cream. Enjoy!
