BEEF QUESADILLA
Ingredients:
- 2 cups cooked and shredded beef
- 2 cups shredded cheese (cheddar or a blend of Mexican cheeses)
- 8 small flour tortillas
- 1 cup diced bell peppers (red and green)
- 1/2 cup diced onions
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Cooking oil for pan-frying
Instructions:
- In a mixing bowl, combine shredded beef, shredded cheese, diced bell peppers, diced onions, ground cumin, chili powder, salt, and pepper. Mix well.
- Place a tortilla on a flat surface. Spoon a portion of the beef and cheese mixture onto one half of the tortilla, leaving a small border around the edges.
- Fold the other half of the tortilla over the filling, creating a half-moon shape.
- Heat a skillet or griddle over medium heat and add a small amount of cooking oil.
- Place the filled quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat the process for the remaining tortillas and filling.
- Once cooked, remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.
Serve the beef quesadillas with your favorite toppings such as salsa, guacamole, and sour cream. Enjoy!
