CHICKEN QUESADILLA
Ingredients:
- 2 cups cooked and shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers (any color)
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 medium-sized flour tortillas
- Cooking oil for pan-frying
Instructions:
- In a bowl, mix the shredded chicken, cheddar cheese, Monterey Jack cheese, diced onions, diced bell peppers, cilantro, ground cumin, chili powder, garlic powder, salt, and pepper.
- Take one flour tortilla and spoon a portion of the chicken mixture onto one half of the tortilla.
- Fold the tortilla in half, covering the chicken mixture, and press down gently.
- Repeat the process for the remaining tortillas and filling.
- Heat a skillet over medium heat and add a small amount of cooking oil.
- Place a folded quesadilla in the skillet and cook until the tortilla is golden brown and the cheese is melted, usually 2-3 minutes per side.
- Repeat with the remaining quesadillas.
- Once cooked, remove from the skillet and let them cool for a minute before slicing into wedges.
- Serve the chicken quesadillas with your favorite toppings like salsa, guacamole, or sour cream.
