HONEY MUSTARD POTATO

Ingredients:

  • 4 large potatoes, washed and diced
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole grain mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, garlic powder, onion powder, salt, and pepper.
  3. Add the diced potatoes to the bowl and toss them until evenly coated with the honey mustard mixture.
  4. Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for about 25-30 minutes or until the potatoes are golden brown and crispy on the edges. Make sure to stir the potatoes halfway through the baking time for even cooking.
  6. Once done, remove the potatoes from the oven and transfer them to a serving dish.
  7. Garnish with chopped fresh parsley if desired.
