MUTTON KORMA

Ingredients:

  • 500g mutton, cut into pieces
  • 2 large onions, finely sliced
  • 2 tomatoes, chopped
  • 1/2 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 1/4 cup cooking oil
  • 1 teaspoon cumin seeds
  • 4 green cardamom pods
  • 4 cloves
  • 2-inch cinnamon stick
  • 1 bay leaf
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a large pot and add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté until fragrant.
  2. Add sliced onions and cook until golden brown.
  3. Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes and cook until they become soft and oil starts to separate.
  5. Add mutton pieces and brown them on all sides.
  6. Mix in turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes to blend the flavors.
  7. Whisk yogurt and add it to the pot, stirring continuously to avoid curdling.
  8. Pour enough water to cover the mutton, bring to a boil, then reduce heat, cover, and simmer until the meat is tender (about 1.5 to 2 hours).
  9. Sprinkle garam masala and garnish with fresh coriander leaves.
  10. Serve hot with naan or rice.
