MUTTON KORMA
Ingredients:
- 500g mutton, cut into pieces
- 2 large onions, finely sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 2 tablespoons ginger-garlic paste
- 1/4 cup cooking oil
- 1 teaspoon cumin seeds
- 4 green cardamom pods
- 4 cloves
- 2-inch cinnamon stick
- 1 bay leaf
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a large pot and add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté until fragrant.
- Add sliced onions and cook until golden brown.
- Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft and oil starts to separate.
- Add mutton pieces and brown them on all sides.
- Mix in turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes to blend the flavors.
- Whisk yogurt and add it to the pot, stirring continuously to avoid curdling.
- Pour enough water to cover the mutton, bring to a boil, then reduce heat, cover, and simmer until the meat is tender (about 1.5 to 2 hours).
- Sprinkle garam masala and garnish with fresh coriander leaves.
- Serve hot with naan or rice.
