CHOCOLATE LAVA CAKE

Ingredients:

  • 4 ounces (about 115 grams) semi-sweet or bittersweet chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • Extra butter and cocoa powder for greasing and dusting the ramekins

Instructions:

  1. Preheat your oven to 425°F (220°C). Grease two 6-ounce ramekins with butter and dust with cocoa powder to prevent sticking.
  2. In a heatproof bowl, melt the chocolate and butter together. You can do this by placing the bowl over a pot of simmering water or using short intervals in the microwave. Stir until smooth.
  3. Remove the bowl from heat and whisk in the powdered sugar until well combined.
  4. Add the eggs and egg yolks one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Sift in the flour and a pinch of salt, then gently fold the dry ingredients into the chocolate mixture until just combined.
  6. Divide the batter evenly between the prepared ramekins.
  7. Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are set but the center is still soft.
  8. Carefully remove the lava cakes from the oven and let them cool for a minute. Run a knife around the edges and invert each cake onto a plate.
  9. Serve immediately, optionally dusted with powdered sugar or accompanied by a scoop of vanilla ice cream.
