Here’s a recipe for Gatte ki Sabzi to serve 4 people:

Ingredients:

For Gatte (Dumplings):

  • 1 cup gram flour (besan)
  • 1/2 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons yogurt
  • Water as needed
  • 2 tablespoons ghee (clarified butter)

For Curry:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1 cup yogurt
  • Fresh coriander leaves for garnish

Instructions:

For Gatte (Dumplings):

  1. In a mixing bowl, combine gram flour, carom seeds, red chili powder, turmeric powder, salt, and yogurt.
  2. Gradually add water and knead into a firm dough.
  3. Divide the dough into equal portions and roll them into cylindrical shapes to make the gatte.
  4. Bring a large pot of water to boil and add the gatte.
  5. Boil for about 10-12 minutes until the gatte float to the surface and are cooked through.
  6. Remove the cooked gatte from water and slice them into small pieces.

For Curry:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and sauté for a couple of minutes until the raw smell disappears.
  4. Add chopped tomatoes and cook until they turn soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  6. Add yogurt and stir continuously to prevent curdling.
  7. Add the sliced gatte to the curry and mix gently.
  8. Simmer for 5-7 minutes until the curry thickens and the gatte absorb the flavors.
  9. Garnish with fresh coriander leaves.
